Mitzi's White Baked Beans

As with old family heirloom recipes, this one was never written down until last Christmas when I asked to make them myself. The key to the success of these beans is that the great northern beans MUST be soaked overnight, so plan ahead when making this....also, don't let the beans get too mushy when simmering.
Ingredients:
1 lb bag of Great Northern Beans
Sugar
1/2 lb of bacon
small onion
Soak beans in water overnight, drain. Place the soaked beans in a dutch oven or pot and add enough fresh water to cover the beans by a few inches. Cut your bacon into bite size pieces, or a touch smaller, and dice your small onion. Add them to the pot of beans along with some salt to taste. Cover, bring to a low boil and simmer on low heat for 45 minutes. Watch that you don't let the beans get too mushy, so check on them toward the end. Mix in one LEVEL cup of sugar, and pour the beans into a baking dish and bake for one hour at 350 degrees. If it looks too watery once in the casserole or baking dish, just remove some of the sugar water and reserve it. During the baking time, if the beans start to get too dry looking, just add in some of the sugar water.
These beans are sweet and a touch salty because of the bacon and are just so good all year long! They taste even better the day after!
